Danyel van den Bongard is a veteran of Maastricht gastronomy. In his homey, always welcoming restaurant, he demonstrates with every service that he knows his classics. He accompanies duck fillet with its own jus, which is full-bodied and seasoned with sage. He also enjoys a playful side, for example, by reinterpreting vitello tonnato with soft pulpo and a red pepper sorbet.
